Fruity No-bake Cheesecake

Fruity No-bake Cheesecake

Ingredients:

  • 150g Graham Cracker or Oreo Cookies
  • 30g melted butter
  • 250g Philadelphia Cream Cheese
  • 110g sugar
  • 250ml *fruit juice
  • 110g fresh *berries
  • 400ml whipped cream
  • 10g gelatine (melted in warm water)

How to make:

1. Combine prepared crumbs (graham or oreos) with the melted butter. Press on bottom of 9 inch springform pan.Kalau guna Oreos, make sure you guys scrape off the cream, and you guys boleh guna cream tu untuk ganti gula.After that you guys can cut back the amount of sugar in the recipe.

2. Beat the cream cheese with sugar in bowl with an electric mixer until smooth. TIPS: Before mixing the cream cheese,wrap the cream cheese dalam plastic wrap and panaskan dalam microwave for 10-20sec.

3. Whisk in fruit juice*, crushed fresh or frozen berries, and whipped cream. Make sure you guys whipped siap2 before campurkan dgn juice tadi. Or if you guys boleh carik Kraft Cool Whip topping,get the 1liter size and used all of it.

4. Mix in the gelatine yang dah dicairkan dalam air panas/suam into the cream cheese mixture.

5. Pour over prepared crust. Freeze until firm. Remove from freezer and let stand in refrigerator for 15 minutes before serving.

I got the recipe from KRAFT Canada and alter it a bit sebab I didn’t have any Cool whip. Try la, sebab cake ni sangat la senang nk buat and only takes about 10-20mins to prepare.

*fruit juice can be orange,apple..etc. Ikut selera masing2

*berries can be either strawberries,blueberries etc. You can use frozen ones kalau tak ada yang fresh

Scones Recipe for Breakfast

A couple of Scones( Skon? ) for Breakfast

Choc Scone

Ingredients:

  • 175ml milk
  • 1tbsp lemon juice
  • 75g butter
  • 3 g baking soda
  • 500 g all-purpose flour
  • 170 g white sugar
  • 5 g baking powder
  • 0.8 g cream of tartar
  • 5 g salt
  • 225 g butter
  • 1 egg
  • 150g chocolate chips or chocolate chunks(optional)

How to Make:

1. Blend the milk,lemon juice and 75g butter(melted). Let sit for awhile until lumps appear and milk starts to thicken.Then add in baking soda, and set aside. (Milk,lemon juice and butter sebenarnye substitution utk sour cream.But if you guys ada krim masam kat rumah, then guna 230g )

3. In a large bowl, mix flour, sugar, baking powder, cream of tartar, and salt. Cut in the butter.

4.Stir the milk mixture and egg into the flour mixture until just moistened.

5.Mix in choco chips. Here you guys boleh ganti dengan raisins,fresh blueberry,walnuts etc. Ikut la you guys nk scone you guys inti apa)

6.Turn adunan tadi onto a lightly floured surface, and uli briefly.Jangan uli lebih2 sangat or scone akan jadi keras.

7.Roll dough into a 3/4 inch thick round. Cut into 12 wedges, and place them 2 inches apart on the prepared baking sheet.

8. Bake 12 to 15 minutes in a pre-heated(180degress) oven,until brown.

Here’s an idea, utk bg scone jadi a bit more moist:

1. Add about 100g of cream cheese and kurangkan milk mixture td jadi separuh.

Tips:

Masa masukan susu, check the texture of the adunan. Jangan sampai adunan terlalu lembik. Kalau agak2 adunan tu dah start berkumpul(hold shape), then stop adding the milk.Kalau banyak sgt susu, nanti scone nya susah nk naik mase bakar.

Chocolate Cake Recipe (Resepi Kek Coklat)

Ingredients:

  • 290g flour
  • 150g cocoa powder
  • 1 tbsp salt
  • 1tbsp baking powder
  • 1tbsp baking soda
  • 675g sugar
  • 5 large eggs
  • 1tbsp vanilla extract
  • 230ml milk
  • 2tbsp lemon juice
  • 170g butter
  • 250ml strong coffee

How to make:

  • Sift together all the dry ingredients;flour,cocoa powder,baking powder,baking soda,salt.
  • Stir in sugar. Sukatan gula ni quite banyak, so if you guys rasa tanak manis sgt,you can always lessen the amount.
  • Combine eggs and vanilla essence in a different bowl. You guys kena make sure that the eggs are at room temperature. Kalau bawak kluar straight from fridge let it warm up to suhu bilik dulu baru guna.
  • Mix in the eggs into the dry ingredients.
  • In another bowl, add milk and lemon juice. Actually, this is to substitute buttermilk. Since buttermilk ni susah juga nk carik,you guys can always use this substitution.Let the milk sit for awhile, sampai susu tu jadi pekat sedikit.
  • Melt the butter.
  • Add in milk(buttermilk tadi),melted butter and coffee ( coffee ni boleh guna Nescafe yang dah dicampur dgn air ) to the dry ingredients.
  • This batter will bake you two 9-inch(23cm) cakes. So kalau nak buat satu je,then separuhkan all the ingredients diatas.
  • Bake in pre-heated oven (180degrees) for about 50mins or so. You guys kena make sure that you guys preheat the oven dulu. This is very important in order to make sure cake korang bakar naik dengan elok, and doesn’t sink in the middle.
  • Transfer pans to a wire cooling rack. Make sure that you guys let the cake cool off completely before doing any decorations on the cake.

Buku ni is mainly on how to make decorations for you cake, but inside are also a few recipes on cakes,fondants,buttercream etc. Agak menarik. And I tell you, the chocolate cake is AMAZING!

Sila la cuba resepi kek coklat ni. And if you find some of the ingredients terlebih ke terkurang ke, you can always make adjustments based on you own taste.

I bought it on an acution about a few months back. This babe is superb! Setakat ini,semua benda yang I baked/cooked using bahan2 yang digaul pakai Mixer ni menjadi..you name it;cake,scones,pie crust,pizza crust, roti,cookie..etc. They’ll turn out just perfect!

Masa shipment ni sampai, in the box was also included a handy recipe book. This book guides you on how to use which tools masa mixing your ingredients using KitchenAid Stand Mixer. The recipes yg ada dlm buku tu pun quite menarik,simple and easy to follow; with step-by-step instructions.

To those yang seriously suka buat2 kek, cookies, roti etc..U guys should really get one of these. Sangat berbaloi for the long run. It’s heavy duty (depends on the models though..but MOST of them are)
and sgt senang utk digunakan.

Some of the pros and cons about the KitchenAid Stand Mixer:

    PROs

1.Consistent mixing,which will results in great texture for whatever that you’re cooking/baking.
2.Easy to use
3.You’ll get 3 attachments: Flat Beater mostly utk adun cake, Wire Whip utk buat whipped cream or whisk meringue, and Spiral Dough Hook utk uli adunan roti.
4.You can attach other stuff to the head of the Stand mixer, such as Pasta maker,Grain Mill etc

    CONs

1.It’s quite big and heavy so a bit hard to move it around.
2.The noise it makes during mixing can be a bit disturbing.

Setakat ini,this is what I can say about the KitchenAid Stand Mixer. Like I said earlier,if you guys are into baking stuff in the long run, then maybe paying some extra cash for a good Stand Mixer is really worth the money.

I highly recommend this product. :D

Substitutions untuk bahan-bahan memasak

Banyak juga cara-cara nak menukar or mengganttikan bahan2 utk memasak especially utk membakar kek, biskut etc.

So,kalau ada bahan yang dalam recipe yang kita tak ada di dapur, bolehlah gantikan dengan benda lain yang lebih simple.

For example, after Ain commented on my cheesecake recipe on how to ganti sour cream, I found out that ada beberapa cara utk menggantikan sour cream(krim masam):

  • 3/4 cup buttermilk plus 1/3 cup butter or

    margarine (melt, cool and add to buttermilk)

  • 1/3 cup buttermilk, 1 tablespoon lemon

    juice, and 1 cup cottage cheese-blended until smooth

  • 3/4 cup milk, 3/4 teaspoon lemon juice, and

    1/3 cup butter or margarine (melt, cool and add to milk)

  • 1 cup plain yogurt or reduced-fat sour cream (will lower fat in recipes and alter the texture and taste)
  • So, to those yang tak berapa pasti nak menggantikan what with what, boleh lah check kat webpage ini. I found it very useful -)

    New York Baked Cheesecake Recipe

    New York Baked Cheesecake

    NY cheesecake

    Ingredients:

  • 1 pack of phillidelphia cream cheese (250g)
  • 200g of sour cream
  • 200ml whipped cream
  • 3 eggs
  • 90g sugar
  • a few drops of vanilla oil
  • 20ml lemon juice
  • 2 tablespoon of cornstarch
  • 300g of Graham crackers
  • 50g melted butter
  • How to make:

    1. Wrap the cream cheese in sunwrap and put in the microwave oven for about 1-2 minutes. The microwave setting has to be at low, and the cream cheese should be warm and soft enough that it will leave a mark when you lightly touch the surface.

    2. Cream the cheese with sugar. Then gradually add the sour cream to the mix. Make the sour cream into 4,5 portions and add it one at a time,evenly mixing it out. Avoid adding the whole sour cream at one time.

    3. Then, add in the vanilla oil and eggs. Eggs should also be added one by one.

    4. Sift in the cornstarch and lastly, add in the whipped cream to the mix. You have to make sure that you mix everything well, and avoid having any lumps in the mix.

    5. Crunch the Graham cookies using a food processor into fine bits. Melt the butter and add into the crushed Graham cookies. Press frimly onto the base of the baking pan evenly.

    6. Take a flour sifter and pour in the mix into the pan through the sifter. This is to avoid any remaining lumps from going into the pan, and making the mix spread out nicely.

    7. Bake in a preheat oven (180degress) for 30 minutes. The technique of baking the cheesecake is to put boiled water around the pan. Avoid putting to much water, and if you’re using a spring type pan, make sure you wrap your pan with aluminium foil to avoid water from going into the pan. Baking at 180degress will give your cake a nice brown color on the top.

    8. Next is to bake it at 160degress for another 30 minutes. This is to make sure that the inside of the cake is cooked. Total baking time is approximately 1hour.

    9. Once finished baking, wrap the cake and put it in the refrigerator to chill.

    I did this recipe quite a while ago, and had always been my favourite cheesecake recipe eversince.Coba,coba jangan tak coba.A simple recipe that I’m sure anyone can do it at a small amount of time -)

    Creamy Puffs Recipe

    Cream Puffs ( choux a la creme )

    Ingredients:

    for the choux pastry:

    *200ml milk

    *90g butter

    *2.5g salt

    *120g sifted flour

    *200g eggs ( about 4 medium sized eggs)

    the custard cream:

    *200ml milk

    *20g sifted flour

    *3 egg yolks

    *100g sugar

    *vanilla essence

    The choux pastry:

    1. Prepare all the ingredients.

    2. Put the water, butter and salt in a pot.

    3. Bring to a boiling point.

    4. Remove from the stove and add the sifted flour at once.

    5. Mix strongly with a wooden spatula until obtaining a homogeneous and chunkless dough.

    6. Put back on the stove and dry the dough, stirring constantly until it doesn’t stick to the sides of the pot, forming a ball.

    7. Take away from the heat and let it cool for 5 minutes.

    8. Combine the eggs one after the other using a wooden spatula.

    9. In the beginning the egg is hard to combine. Insist and mix strongly.

    10. Combine with the other eggs, one at a time. The paste is ready for use.

    11. Insert pastry in a piping bag,with the round nozzle. Pipe pastry on a lightly oil-brushed flat baking pan. Gently pat the top of the pastry with a fork,slightly dipped in water.

    12. Bake in pre-heated oven ay 200 degress, and lower the temprature to 170 degress once pastry starts to swell.

    The custard cream:

    1. Bring the milk to a boiling point, with a few drops of vanilla essence.

    2. Mix the yolks and sugar and whisk until pale and light.

    3. Add the flour.

    4. As soon as the milk starts to boil pour at once the milk on the eggs, whisking.

    5. Transfer back into the milk pot and cook for 4 to 5 minutes, constantly stirring and making sure the cream doesn’t stick to the bottom. The cream will get thicker.

    6. The cream is ready. To prevent the formation of a crust on the surface, you can cover it with a plastic film put directly on the cream or brush with a knob of butter. Leave to cool.

    Finishing touch:

    1. Sliced the cooled choux pastry into 2 and put a spoon of custard cream in it.

    2. Sift icing sugar on top.

    ..yupp..tried making some home-made cream puff at home..why? because i saw this TV show about cream puffs..haha! dan dan tros buat..it’s not that hard..you guys should give it a try -D

    Chicken Pie Recipe

    Ingredients:

  • 2 slices instant pie sheet (pastry sheet)
  • 150 g onion (shredded)
  • 200 g minced chicken
  • 2 tbsp margerin/butter
  • 150 g mix veggie
  • 1 stem celery (shredded)
  • 1 small pack Campbell Mushroom Soup (powder)
  • 1 tbsp honey
  • 1 tspn oregano
  • salt and pepper to taste
  • topping:

  • white sauce ( 2 tbsp butter, 2 tbsp flour, 200-300ml warm milk) -> refer Kani-kurimu-korokke on how to make white sauce
  • 2 potatos, verticaly thin sliced
  • How to make:

    1. In a heated pan, melt butter and saute onion with minced chicken. Always stir to make sure that the miced chicken doesn’t stay in lumps.

    2. Add mix veggie and celery. Simmer for 3-5 minutes.

    3. Add Campbell Mushroom Soup ( reminder: use POWDER mushroom soup, not the ones in the can ). Stir

    4. Sprinkle salt and pepper, oregano and honey. Stir until the mixture thickens.

    5. Place in a large bowl and let it cool.

    6. Prepare the white sauce alongside the thinly sliced fired potatos ( this is optional )

    7. Cut the pie sheets into 5-6 equal size. Roll it out and put a layer of chicken mixture, followed by white sauce and sprinkle fried potato on top of it ( it should be very crispy, and crush it into small bits )

    8. Bake in the oven until golden brown.

    ..as requested by bbdk Okayama, I did this for our kenduri Raya besar-besaran on Saturday. I normally just toss in the things I feel like, and voila…there u have it.. my very own Original Chicken Pie Recipe..Anda2 sume dijemput mencoba resepi ni..serious sedap -) ( i’m a bit suprised myself dgn kesedapan inti pie ni -P ) well, Bonne Chance ppl! ;-)

    Ingredients:

  • 1 ?????? cup flour
  • ?????? cup tapioca flour (tepung ubi)
  • 3 ?????? cup coconut milk
  • 1 cup sugar
  • 1 teaspoon salt
  • red coloring
  • How to make:

    1. Sift together flour and tapioca starch ( or is it tapioca flour? not so sure)

    2. Add in sugar into the coconut milk and mix until all the sugar is desolved.

    3. Pour in coconut milk into the sifted flour and stir until there’s no lumps left in the mix. Add salt.

    4. Divide mixture into two portions; adding a bit of red coloring to one portion and leaving the other portion white in color.

    5. Heat up steamer until water boils.

    6. Place in tray in the steamer, pour in the white portion to make the first layer and cook for about 3 minutes. Then make the 2nd layer using the red portion and repeat this until you get a total of 6-8 layers ( depending on how thick your layers are. Don’t make it too thick, or too thin )

    7. Once finish with the layers, cook a little bit more for about 10-20 minutes. Leave to chill and cut into serving size.

    ..yup, tatkala bulan pose ni la terasa nak makan kuih tradisi melayu..plus, i was trying ot out sebab nk bawak utk iftar ahad ni. sumber yg bg resepi ni pon ditulis “orang lama-lama” ..hehe,mmg rasa pon cam kuih lapis yg my mom use to make.natsukashii aji desunee..well, kawan2..kalu nk cuba,silakan. especially utk org2 yg dok overseas ni. mesti akan ingat umah punye bile makan kuih ni -homesick- then again, SELAMAT MENCOBA!
